Preheat the oven to 375°F. 2. Peel, core, and quarter the apples. Toss with a pinch of salt and sugar to taste (depending on their sweetness). 3. Arrange in a shallow baking dish so they crowd in a single layer. Dot with slivers of butter and cover tightly with foil. 4. Bake until the apples start to soften (15–30 minutes, depending on the variety). 5. Uncover, raise the oven temperature to 500°F, and bake for another 10 minutes until the tips are golden and the apples are tender. 6. Scrape into a bowl and mash into a chunky texture. Adjust seasoning with salt, sugar, or a splash of cider vinegar to taste. Savory Apple Charlotte Recipe Ingredients 4 oz day-old peasant-style bread 2–3 tablespoons unsalted butter, melted About 1 1/3 cups roasted applesauce Instructions 1. Preheat the oven to 350°F. 2. Slice bread into ⅛-inch thick pieces. Cut rounds to fit the bottom of your ramekins and long strips for the sides (using a paper template helps). 3. Brush one side of each piece with melted butter. Line ramekins with bread, buttered side against the dish, and press to fit snugly. Set aside extra rounds for the tops. 4. Fill each ramekin with roasted applesauce. Cover with a bread round, buttered side up. Press gently to seal. 5. Bake until golden brown and crisp, about 30 minutes.
