Golden, cheesy, and comforting in every bite—today’s recipe comes straight from a small-town Georgia restaurant with a big legacy. This squash casserole is from Pansy’s Collection, a community cookbook compiled by Pansy Agerton of Pansy’s Restaurant in Louisville, GA. I used to eat there almost daily on work trips in the ‘90s, and this recipe brings it all back. I didn’t choose this dish because I was craving Southern food—it came up randomly, like everything on this channel. But I’m so glad it did. In this video, I walk through how to make the casserole step by step, share a bit of history about Pansy and her philosophy on cooking, and show you how something simple can still be deeply satisfying. ⸻ Cookbook: Pansy’s Collection Compiled by Pansy Agerton (Louisville, Georgia) Recipe: Squash Casserole Patreon page for those wanting to help me make more: / randomrecipeproject ⸻ Ingredients: 3–4 pounds yellow squash, sliced 1 large onion, chopped (or 2 small ones) 1 stack saltine crackers A splash of milk 2 eggs, beaten Salt and pepper to taste Grated cheese (I used Colby Jack) Margarine or butter for topping ⸻ Instructions: 1. Boil the squash and onions until just tender. Drain thoroughly and mash. 2. Soften the saltines with milk, then mix into the squash. 3. Stir in the eggs, salt, and pepper. 4. Pour into a greased 9x13-inch dish. Top with cheese and dot with margarine. 5. Bake at 350°F for about 30 minutes, until golden and set. ⸻ 🍴 About This Channel: The Random Recipe Project is all about embracing the unexpected. I cook whatever recipe my collection of cookbooks—new, old, obscure, or iconic—throws at me next. Every dish has a story. Sometimes it’s a hit. Sometimes it’s weird. Either way, I cook it on camera so you don’t have to (unless you want to). ⸻ If You Enjoy This Video: 👍 Like the video if you love cozy casseroles and cookbook adventures 📌 Subscribe for more randomized recipes from across the culinary spectrum 💬 Comment below—what’s your favorite casserole?
