🥒 How to make homemade pickles at home — with the perfect balance of spice, sweetness and crunch! In this video, I’ll show you how to prepare spiced pickled cucumbers that stay wonderfully crispy and full of flavour. This recipe is simple, makes a large batch (enough for 5-litre jars), and is perfect for storing or sharing with family. ✨ These pickles are flavoured with dill, blackcurrant leaves and a touch of chilli sauce for a gentle kick. The brine is rich, aromatic and delicious — a true homemade classic. ⸻ Ingredients (for 5-litre jars): • 3 kg cucumbers, washed • 7 cups water • 2 tablespoons salt • 1 cup sugar • 8 tablespoons chilli sauce • 1 teaspoon whole allspice berries • 3 whole black peppercorns per jar • 1 cup vinegar (must be 9%) To flavour each jar: • 1 bay leaf • A few fresh sprigs of dill • 1 blackcurrant leaf ⸻ Method: 1. Rinse the cucumbers well and pack them snugly into clean, sterilised jars. 2. Place a bay leaf, a few sprigs of dill, a blackcurrant leaf and the peppercorns at the bottom of each jar. 3. In a large pan, combine the water, salt, sugar, chilli sauce and allspice. Bring to the boil over medium heat. 4. Once boiling, add the vinegar (must be 9%) and bring back to the boil. 5. Carefully pour the hot brine over the cucumbers in the jars, making sure they are fully covered. 6. Stand the jars in a pan of gently boiling water and sterilise for 10 minutes. 7. Seal the jars at once and allow to cool before storing in a cool, dark place. Homemade pickles are always special — they carry a little warmth from your kitchen into every meal.
