Mutton Gravy: Ingredients: 500 g mutton 2 tsp ghee 3 cardamom pods 2 cloves 1 cinnamon stick 1 tsp fennel seeds 2 onions, finely chopped 1 tbsp ginger-garlic paste 1 green chilli, finely chopped 2 medium tomatoes, finely chopped 2 tbsp mint leaves, chopped 2 tbsp coriander leaves, chopped Salt, to taste ¼ tsp turmeric powder 2 tsp red chilli powder ½ tsp garam masala 1 tbsp mutton masala powder Water, as needed 1 tsp pepper powder Method: 1. Heat 2 teaspoons of ghee in a pressure cooker. Add cardamom, cloves, cinnamon, and fennel seeds. Sauté until aromatic. 2. Add chopped onions and sauté until translucent. Add ginger-garlic paste and stir well. 3. Add green chilli and chopped tomatoes. Cook until tomatoes soften. Add mint leaves, coriander leaves, and salt. Mix well. 4. Add turmeric powder, red chilli powder, garam masala, and mutton masala powder. Mix until well combined. 5. Add the mutton and mix until the masala coats the meat evenly. 6. Add a little water and stir. Close the lid and pressure cook for 3 whistles. 7. Open the lid and simmer until the gravy reaches your desired thickness. 8. Add pepper powder, mix well, and turn off the heat. 9.
