Bangalore Style Sambar Recipe: Ingredients: For Cooking Dal: ½ cup Toor dal Water (as required) ¼ tsp Turmeric powder 1 tsp Cumin seeds For Sambar Masala Paste: 1 tsp Oil ½ tsp Fenugreek seeds 1 tbsp Cumin seeds ½ tsp Black pepper 2 tbsp Coriander seeds 3 tbsp Chana dal 5 Kashmiri red chilies ½ cup Grated coconut ½ Onion (chopped) For Sambar Base: 3 tbsp Oil 1½ Onions (chopped) 2 Tomatoes (chopped) ¼ tsp Turmeric powder 1/2 cup tamarind water Salt to taste 2 tsp Jaggery powder ½ tsp Asafoetida (hing) Cooked toor dal Water as needed For Tadka (Tempering): 1 tbsp Oil 1 tsp Ghee 1 tbsp Mustard seeds Few Curry leaves For Garnish Chopped Coriander leaves Method: 1. Cook the Dal: Wash toor dal twice and add to a pressure cooker. Add enough water to cover the dal. Add turmeric powder and cumin seeds. Mix well, cover, and pressure cook for 5 whistles. Mash the dal and keep aside. 2. Prepare Sambar Masala: Heat 1 tsp oil in a pan. Add fenugreek seeds, cumin seeds, black pepper, coriander seeds, chana dal, and Kashmiri chilies. Fry on low flame until golden and aromatic. Transfer to a mixer jar. In the same pan, add grated coconut and roast until lightly golden. Transfer to the same mixer jar. Add ½ chopped onion to the pan and fry until golden. Transfer to the mixer jar. Grind everything into a smooth paste. 3. Prepare Sambar Base: Heat 3 tbsp oil in a pan. Add 1½ chopped onions and fry until golden brown Add chopped tomatoes and a little salt. Mix, cover, and cook until tomatoes turn soft. Add turmeric powder and mix well. Add ground masala paste and rinse the mixer jar with water; add this to the pan. Mix well, cover, and cook until oil starts separating. 4. Combine Dal: Add cooked dal to the masala mixture. Mix well Then add half cup tamarind water and adjust salt. Add jaggery powder and asafoetida. Boil for a few minutes until slightly thick. 5. Tadka: Heat oil and ghee in a small pan. Add mustard seeds; let them splutter. Add curry leaves. Pour tadka over the sambar. 6. Final Touch: Add chopped coriander leaves. Mix well, cover, and rest for 10 minutes.
