Paruppu Payasam (Moong Dal Payasam): Ingredients: ½ cup moong dal (yellow split gram) Water (enough to cook dal) 1 cup jaggery powder (or grated jaggery) ½ teaspoon freshly ground cardamom powder A pinch of salt ½ liter milk 2 tablespoons ghee ¼ cup cashew nuts ½ cup grated coconut ¼ cup coconut water 1 tablespoon rice flour Method: 1. Add moong dal to a pressure cooker and wash it twice. 2. Add enough water to cover the dal. Close the lid and pressure cook for 3 whistles. 3. The dal should be well cooked but not mashed. 4. Gently mash the dal using a ladle. 5. Add jaggery powder, cardamom powder, and a pinch of salt. 6. Mix well until the jaggery dissolves completely and no lumps remain. 7. Pour in the milk and mix well. 8. Boil on medium flame until the payasam begins to thicken. 9. Heat ghee in a pan. 10. Add cashews and fry until golden brown. 11. Add grated coconut and roast for a few seconds. 12. Pour this mixture into the payasam. 13. Boil the payasam for 10 minutes. 14. In a small bowl, mix coconut water and rice flour until smooth. 15. Add this mixture to the payasam and stir continuously. 16. Boil for another 5 minutes. 17. Turn off the stove, cover, and let it rest for 10 minutes. 18.
