Beef Barley Soup is so hearty and delicious! I've taken my regular beef stew recipe and changed it up a bit to include some quick pearled barley that I found at Walmart. The flavors are savory and rich, beefy and deep, with some nuttiness coming from the barley. I'm using freeze dried veggies along with the beef dices. A bit of tomato sauce powder and Espagnole sauce mix along with a splash of red wine. It all comes together in about 25 minutes. I hope you enjoy this! Thank you for your support! ➡️ Here's a direct link to purchase my new cookbooklet! https://payhip.com/b/LYnkz Beef Barley Soup quart jar (3 large servings) 1 1/3 cups FD beef dices 1/2 cup FD mushrooms 1/2 cup FD mirepoix (FD onions, FD celery, FD carrots) 1/3 cup extra FD carrots, broken into pieces (optional) 1/2 cup quick cook pearled barley 1/2 Tbsp FD garlic 2 Tbsp tomato sauce powder (or tomato powder) 2 Tbsp Espagnole sauce powder 1/2 Tbsp beef bouillon powder 1/2 Tbsp Worcestershire sauce powder 1 tsp FD thyme 1 tsp FD parsley 1/2 tsp kosher salt 1/2 tsp black pepper fill the jar with extras if you have room (more beef or mushrooms or barley, etc.) bay leaf oxygen absorber To Prepare: Into a Dutch oven or large pot, add 2 Tbsp olive oil and heat to medium. Add contents of jar and dry sauté for 1-2 mins, stirring constantly. Add 1/2 cup red wine, optional, and stir for 1 min. Add 6 cups water and stir. Bring to a boil. This will take about 5 minutes or so. When it reaches a boil, stir again, then reduce heat to med low (4 out of 10 on my stove). Simmer for 20 minutes, stirring occasionally.
