For 4 servings, base these measurements on a 1-cup starting point. For smaller 2-serving amounts, cut everything in half. 1. Aromatics (FD mirepoix - onion, celery, carrots) - 1 part 2. Oil (olive oil, avocado oil, coconut oil, butter, tallow, etc.) - 3 to 4 Tbsp 3. Filler vegetables (any FD veggie you like) - 2 to 3 parts 4. Filler starches, optional (pastas, rice, canned beans, instant FD beans, tortellini, gnocchi, etc.) - 1 to 2 parts 5. Flavor enhancers (garlic, bouillon powders, spices, herbs, seasonings, sauces and sauce powders, pastes, etc.) - to taste (start with 1/2 tsp of seasonings and build up according to your preference; for sauce mix powders, start with 1-2 Tbsp and go up from there) 6. Proteins, optional (FD meats, fresh rotisserie chicken, frozen meatballs, canned meats, etc.) - 1 to 2 parts 7. Liquids (water, broth, stock, bone broth, etc.) - 7 cups, give or take 8. Fantastic finishers (heavy cream, half & half, milk, cheese, sour cream, cream cheese, parmesan, acids like lime juice, lemon juice, or red wine vinegar, thickeners, drizzle of sesame oil, etc.) - to taste Creamy & Cheesy Tortellini and Meatball Soup: 4 servings (measurements are approximate) about 1 cup mirepoix, rehydrated in 1/3 cup water, sauteed in about 3 Tbsp olive oil over med heat about 2 1/2 cups total of the following veggies: zucchini, butternut squash, mushrooms, red bell peppers, kale, green onions seasonings of 1 Tbsp chicken bouillon, 1/2 tsp kosher salt and pepper, 1 tsp FD Italian seasoning, 1/4 tsp red pepper flakes, 1/2 tsp FD parsley 1/2 Tbsp FD garlic 1 Tbsp tomato sauce powder 1 to 2 additional Tbsp olive oil stir and "dry sauté" for about 1 min, then add liquid 6 to 7 cups water 1/4 cup each of bechamel and cheese sauce powders 1 tsp gochujang about 1 1/2 cups shelf-stable tortellini from Trader Joe's (1 pkg) about 1 1/2 cups frozen meatballs 1 bay leaf bring to a boil over med high heat reduce heat and simmer for 10-12 mins or until veggies are cooked and pasta is tender finish with 1/2 cup heavy cream and 1/2 cup freshly grated parmesan garnish with fresh cracked black pepper and scallions Disclaimer: I am a home cook and not a food safety expert.
