Here are the ingredients: 1 kg minced pork 1/2 cup warm water 1 tbsp atchuete 1 tbsp salt 1 tbsp ground peppercorn 1 tbsp sweet paprika 1 tbsp white vinegar (Optional) 1 cup brown sugar 4 tbsp soy sauce 1 head garlic (minced) 1/2 cup bread crumbs -------------- 2 tbsp cornstarch (Optional - if you want it to be dry caramelization or more on like a hotdog style) Note : Make sure when you cook the longganisa cover the pan with a lid so the middle part of longganisa will be cooked properly and evenly in low to medium heat. Once the water is reduced, you can then add oil, turn the heat medium to high and keep on mixing to avoid burning the longganisa until you get your desired caramelization. Longganisa is one of Pinoy's favorite breakfast. There are different kinds of longganisa depending on which town or province it is from in the Philippines. There is garlicky taste longganisa from Lucban and Vigan, salty and sour taste from Pampanga, there is also now adobo longganisa but my favorite of all is the sweet longganisa which I used to eat in my childhood. The country where I am now is also selling longganisa in Asian shops but it's very expensive and it's not that much. So I created this recipe!!! It really tastes like the longganisa I used to eat in my childhood. One of the comments I got from my sister is "the taste is very addictive" and "it's very tender and juicy".
