RECIPE: Pizza Dough: 8 ½ Cups (1000g/1kg) All-purpose flour 3 TSP (9g) Instant Yeast 2 TSP (10g) Kosher Salt 3 ⅓ Cups (800ml/800g) (80% Hydration) Warm Water (80°F - 90°F) ¼ Cup (55g) Olive Oil - cover the top, don't mix in. Pizza Sauce: 1 Can (3 ⅓ Cups/796ml/28oz) San Marzano Tomatoes 1 TSP (5g) Kosher Salt 1 TSP (3g) Black Pepper 1 TSP (1g) Dried Oregano 2 TBSP (⅛ Cup/28g) Olive Oil 1 TBSP (15g) Tomato Paste Cheese: Fior di Latte Pizza Dough / Pan Math Measure your pan in centimetres (Length x Width) Example: If your pan is 20cm × 30cm = 600 cm² Total dough weight (in grams) = 600 ÷ 2 = 300g To figure out your flour weight and 80% hydration: Dived your 300g (your number) by 1.8 Flour = 300 ÷ 1.8 = 167g Water = 167 × 0.8 = 133g
