You'll need these ingredients. 8 cups of Vegetable Broth 3 Chipotle Peppers in Adobo 1½ Cups Walnuts 1 Cup Almonds 1 Cup Cashews 2 tbs Tomato paste 1 large carrot 2 Shallots 6 Cloves Garlic 2 Stalks Celery 1 Serrano Pepper 1tbs Vegetable Paste 3 tbs Coconut oil 1 tbs Chili powder 2 tbs Salt 1 tbs Onion Powder 1 tbs Garlic Powder ½ tbs Cummin ½ tsp Cinnamon ½ tbs Sumac 1 tbs Cocoa Powder 2 tsp Espresso Powder 1 ½ tsp Black Pepper ¼ tsp MSG (If you're feeling crazy) Now let's talk Method. I'm a Dutch Oven guy. I use it more than anything else in my kitchen. Add finely chopped aromatics to coconut oil. Cook until Onion is translucent. Add your tomato paste, veggie paste and fry off for 1 minute. Toss in your Walnuts and mix well. Poor in stock and Chipotle Peppers, finely minced. Simmer 2 hours on low. Hit the Dutch Oven with stick blender, careful nut to break up all the Walnuts. Add in your roughly chopped almonds and cashews. Simmer for 1 hour. Serve with Avocado, scallions and lime. Enjoy!
