#ramen #modernistcuisine #philipspastamaker Megan and I tried making ramen using our new pasta maker, comparing two recipes: one from The Modernist Cuisine, and the other from Momofuku. Disclaimer: This is by no means a valid test of either recipe, since we are not following the directions completely (both recipes are meant to be made by hand). Knowing that the texture might be sacrificed without the amount of kneading suggested, we wanted to compare the end results using the Philips Pasta Maker as a shortcut.
