Delicious Butter Pecan Fudge the way fudge shops make it. This would let anyone know you think they are special or just a great treat for yourself. Butter Pecan Fudge **Chop and toast 1 cup of pecans in an over for 5 minutes at 350ºF. **Set pecans off to the side **Sift 2 cups of powdered sugar to be used at the end of the recipe. If you can's sift use a whisk to break apart any lumps in the powdered sugar ** Over medium heat place a heavy pot with tall sides. 1/2 cup + 1 teaspoon butter 1/2 cup sugar 1/2 cup brown sugar 1/2 cup heavy cream 1/8 teaspoon salt **cook over medium heat, stir often, until this mixture begins to boil. Make sure to use a heavy pot with tall sides as this mixture bubbles and grows while cooking **Once the mixture begins to boil, take the temperature using a candy thermometer or instant read thermometer. **Stir constantly at this point to avoid burning. **Take off the heat once the mixture reaches 235ºF (softball stage) 1 cup of chopped, toasted, pecans 2 cups powdered sugar **Mix until all powdered sugar is blended well **Pour mixture into a parchment/foil lined 8x8 inch square pan (I used a 9x9 inch pan and just didn't spread it out to the sides) that has been sprayed or greased **Let cool 2 hours before slicing into pieces
