Pinakbet is a classic Filipino vegetable stew that's beloved for its rich umami flavor and hearty mix of vegetables. Traditionally made with a medley of squash, eggplant, okra, ampalaya (bitter melon), and string beans, it’s simmered in a savory base of bagoong (fermented shrimp or fish paste) that gives the dish its signature depth. Often enriched with pork for added flavor, Pinakbet is a humble yet satisfying dish rooted in Filipino home cooking—especially popular in the Ilocos and Tagalog regions, each with their own twist. Served with steamed rice, it's the perfect comfort food that brings together the bold, earthy flavors of the Philippine countryside. Pinakbet List of ingredients: 1/4 pork belly 2 medium eggplant (chopped) 1 medium onion (diced) 4 cloves garlic (minced) 2 pcs tomato (diced) 2-3 tbsp cooked alamang 2-3 cups squash (chopped) 1/2 cup water 3 pcs string beans (2-inched cut) 1 pc ampalaya (sliced) 5 pcs okra (sliced) Salt & black pepper to taste Procedures: *In a bowl, put the pork belly and season with salt & black pepper. *Massage well and let it sit for 5 minutes. *After 5 minutes, heat the pan and sear the pork belly until light brown and the oil renders from fat. (this method will give more flavor to the dish) *Once the oil comes out, removed the pork from the pan and set aside. *In the same pan, saute the eggplant for few minutes until light brown. *Set aside. *In the same pan again, saute the onion, garlic, and tomato, cooked alamang, and squash. *Pour 1/2 cup of water. *Simmer for 5-8 minutes or until veggies are tender. *After 8 minutes, add the seared pork belly. *Simmer for 2-3 minutes. *After 3 minutes, add the string beans, ampalaya, and okra. *Toss to combine. *Simmer for 5-8 minutes or until other veggies are tender. (stir occasionally to prevent sticking) *Once veggies are tender, add the sauted eggplant. *Mix well. *Taste to check the flavor. *Adjust seasoning according to your taste. *Simmer for 1-2 minutes more. *Once everything is good, turn off heat and transfer in a serving plate. *Done and serve. #pakbet #lutongbahay #cookingchannel #pingtoper
