She highlights its significance in public health, food safety, and nutrition policy. From the earliest experiments mapping the caloric content of foods, to the discovery of macronutrients and vitamins and minerals, our knowledge of food composition has shaped how we know food. Food composition data guides dietary recommendations, guides strategies to address malnutrition, and shapes our concept of sustainable food systems. Dr. Schönfeldt highlights both the benefits and limitations of traditional food composition analysis and discusses how foodomics can expand the aperture on food composition. Food EDU is facilitated by the American Heart Association and the Alliance of Bioversity and CIAT as co-secretariats of The Periodic Table of Food Initiative (PTFI).
