Burdock root gets salty (and sweet)! | Korean Banchan and Gimbap ingredient.

You would not believe how many times I bought this freakishly long vegetable (?) from the Korean grocery store and ended up not making anything and throwing it out because it went bad. Okay, I will tell you. It was more than 4 times. I am really proud of this video because I didn't give up. Even when it kept rotting and I had to toss it over and over and over and (heh heh) over. I bought it yet again, OPPA was very skeptical and I proved him wrong. Ha! I hope burdock root takes off and I can buy it at the regular grocery store because it has many amazing health properties (source of fiber, antioxidant, anti-inflammatory AND MORE!). It's a superfood! Although I have to think of how the sugar content would adversely affect the overall goodness... Well, everything in moderation! Burdock root gimbap is my fave by the way. It is also my favourite banchan with a plain bowl of rice. Hot bowl of rice + soy saucey burdock root + seasoned spicy-sweet squid. Omg yum. 🔪WHAT YOU NEED: Burdock root Soy Sauce Liquid sugar (Honey/Corn syrup/Oligosaccharide) or just plain sugar Pot Water WHAT TO DO: Cut root into matchsticks (if making gimbap). Slice into 2-inch thin slices diagonally (if you're making banchan). Put into pan and add water to braise. It should be softened but still crunchy after about 10-15 mins. Add soy sauce and sugar of your choice in equal parts. Stir fry until most of the liquid evaporates. Taste test and adjust accordingly. Too salty? Add water. Too sweet? More soy sauce. Not sweet enough? Add sugar. Garnish with a drizzle of sesame oil and toasted sesame seeds. If you want.
