Here’s a ghoulishly good Halloween dinner recipe. Forget ordinary meatloaf, this delicious Dead Man Over Worms version will give everyone a fright. Serve it on a bed of pasta “worms” for a terrifyingly delicious meal the whole family will love! DEAD MAN OVER WORMS SERVES 4 TO 6 3 large eggs 2/3 cup whole milk 1 cup old-fashioned oats 1/2 cup grated peeled carrot 1/2 cup finely chopped onion 1 cup shredded Cheddar cheese 1 tablespoon chopped fresh flat-leaf parsley leaves 1 teaspoon salt 1 teaspoon dried bouquet garni 1/2 teaspoon Essence Creole Seasoning 2 pounds lean ground beef 1 pound mild Italian sausage 1 pound spaghetti TOPPING: 1 cup tomato ketchup 1 cup packed light-brown sugar 1/4 cup pure maple syrup 2 teaspoon prepared mustard Preheat the oven to 350 degrees F. In a large bowl, beat the eggs. Add milk and oats. Stir in carrots, onions, cheese, herbs, and seasonings. Add beef and sausage and mix well. In a shallow baking dish, shape beef mixture into the shape of a body. Round ball for head, oval shape for body, mounding up for tummy. Shape arms next to body leaving attached. Shape legs and feet, leaving attached. Bake until meat is cooked through, about 45 minutes, Meanwhile, combine topping ingredients in a medium bowl. Cook spaghetti, according to package directions, rinse and set aside. After 45 minutes, spoon half of the topping over meatloaf. Return to oven and continue baking for an additional 15 to 20 minutes. Remove from oven and let stand for 10 minutes. Place spaghetti on a serving platter. Using large spatulas, carefully transfer meatloaf onto spaghetti. Pour remaining sauce on top of noodles. To serve, place a knife in the "heart" of the meatloaf and be ready for everyone to "cut-up!" Recipe courtesy Emeril Lagasse, copyright Martha Stewart Living Omnimedia, LP., all rights reserved.
