Description Today I am sharing an authentic recipe for Sindhi Besan Gatte ki Sabzi/ Latthan ki Bhaji Kadhi/ godiyo ki kadi. Ingredients For Besan Gatte 1. Gram flour/besan 1 &1/2 cup 2. Salt 1/2 tsp 3. Red chilli powder 1/2 tsp 4. Carom seeds/ Ajwain 1/4 tsp 5. Green chillies 1 6. Garam masala 1/4 tsp 7. Baking soda 1/2 pinch 8. Oil 3 tbsp & oil for frying For Gravy 1. Onion 2 medium 2. Tomatoes 2 big 3. Ginger 1-inch piece 4. Green chillies 2 5. Green coriander leaves 6. Salt 3/4 tsp 7. Red chilli powder 1/2 tsp 8. Turmeric powder 1/4 tsp 9. Coriander powder 1 tsp 10. Garam masala 1/4 tsp 11. Oil 2 tbsp Method For Besan Gatta 1. Take gram flour/ besan in a mixing bowl, add salt, red chilli powder, garam masala, carom seeds/ ajwain, green chilli, baking soda & mix well. 2. Add 3 tbsp oil, mix well, add water gradually and knead medium soft dough. 3. Apply oil on hands and board, massage the dough to make it smooth. 4. Divide the dough into three parts, roll each part into a long log, cut each log into two parts. 5. Boil sufficient water in a kadhai and place all the logs in boiling water & let them boil on high flame. 6. When logs float on the surface of the water, bubbles appear on the surface of logs and they become somewhat thicker then take them out, keep the water for gravy. 7. Cut the logs into small pieces to make gatte. 8. Fry gatte in hot oil till they turn light golden color for the sabzi and if you want to enjoy dry gatte then fry them till golden color or till they turn crispy. For Gravy 1. Either cut tomatoes into small pieces or grate them or grind them to make a puree. 2. Heat 2 tbsp oil in a pressure cooker. 3. Add finely chopped onion and fry them till golden brown color by continuously stirring them on medium flame. 4. Low the flame, add turmeric powder, red chilli powder & coriander powder, mix slightly and add tomato puree, ginger and green chillies. 5. Mix well and cook till oil starts separating. 6. Add 1/2 cup water, close the lid, take 1 whistle. 7. After the pressure is released open the cooker and blend the mixture with the hand blender or grind it. 8. Now cook the gravy on medium flame, add gatte and cook for 1/2-1 minute. 9. Add the water (which we have kept aside), mix well, add 3/4 tsp salt & mix well. 10. Let it boil till the gatte become soft, low the flame, cover the kadhai and let it cook for 2-3 minutes, switch off the flame. Delicious Sindhi Besan Gatta Sabzi is ready to enjoy!!
