Dinner anyone? In this video, our friend and SCI BC member Dan Duffy (aka the Quad Chef) shows us how to make steamed mussels with homemade chimichurri topping. RECIPE Ingredients 1 pound of mussels When picking up, you can ask staff to clean them for you. This will take away the extra step of removing the ‘beards’ of the mussels.If your mussels come with beards, hold firmly at the base and pull down to remove. 1 shallot 1 lemon 1 garlic clove 3 fresh herbs of your choice (Dan used basil, mint & parsley) Olive oil Thai pepper (optional) White wine (optional) Recipe 1. To make chimichurri topping, chop equal parts of your 3 fresh herbs. Add chopped garlic, chopped Thai pepper (optional), and mix together. Cover with enough olive oil to soak, but not drown, and set aside to marinade. 2. Heat 1 Tbsp of olive oil over medium heat in a deep pan. 3. Grate or slice lemon peel for lemon zest (if slicing, continue to slice into small pieces). Chop shallot and add both to heated olive oil. 4. Stir frequently to avoid burning. 5. Once cooked, add mussels to the pan and mix with the shallot and lemon zest. 6. Add ½ - 1cup of white wine (can substitute with chicken or vegetable stock, coconut milk, etc.) to the pan and cover mussels with a lid to steam. 7. Watch as the mussels start to open. When the majority have opened, you know your mussels are done! (Do not eat the mussels that remained closed – this may be a sign that the mussel was already dead and may result in food poisoning). 8. Dish mussels into a bowl, adding some of the tasty broth, and top with your chimichurri topping. Slice up your favourite bread for dipping and enjoy!
