In this video, you’ll see: ✅ A fresh fruit & veggie haul 🛒 ✅ What I bought and why 🍉🥕 ✅ A simple & tasty Lamb Roast Dinner recipe Grocery List: Vegetables Spinach Kale Brinjals Baby marrow Green bell peppers Red bell peppers Carrots Red Onion Cabbage Yellow potatoes Mushrooms Broccoli Cauliflower Avocados Orange sweet potatoes Fruit: Strawberries Pomegranate Extra/Other: Macadamia honey Heavy duty foil Bamboo toothpicks One Sheet Pan Pork Chops & Vegetable Roast Ingredients: 3 medium potatoes (quartered) 3 medium carrots (diagonal slices) Broccoli heads Whole mushrooms 1/2 red onion (quartered) 1/2 red bell pepper (chunks) 1/3 green bell pepper (chunks) 2 zucchini’s sliced into discs Dressing: 1/2 tsp salt 3 tbsp olive oil 1/2 tsp crushed garlic 1/4 tsp sumac 1/4 tsp paprika 1/4 tsp coriander 1/4 tsp onion powder 1/4 tsp mixed herbs Pork Marinade: 1/2 tsp salt 1 tsp curry powder 3 tbsp olive oil 2 tbsp tomato paste Dip: 2 tbsp mascarpone 1 tbsp olive oil 2 tbsp cottage cheese 1 tsp milk 1/4 tsp apple cider vinegar Pinch of salt 1 tbsp honey Chopped fresh basil Mixed herbs Instructions: 1. Preheat Oven: to 180°C (350°F). Line a baking sheet with oiled foil or parchment paper. 2. Prepare Marinade: Mix olive oil, curry powder, tomato paste, and salt. Massage into pork chops and refrigerate for 2 hours or overnight. 3. Prepare Dressing: Mix olive oil, garlic, salt, spices, and herbs. Toss potatoes, carrots, and broccoli in one bowl; mushrooms, peppers, and onion in another. Coat well with dressing. 4. Roast Vegetables: Bake potatoes alone for 20 minutes. Add carrots, broccoli, and zucchini, bake for another 20 minutes. Add mushrooms, peppers, onions, and pork chops. Bake for 20 more minutes.Check at 30 minutes as oven times may vary. (Total cooking time is 1hour) 5. Prepare Dip: Mix mascarpone, cottage cheese, milk, apple cider vinegar, salt, honey, basil, and herbs until smooth. Adjust salt to taste. 6. Serve: Once pork is done, brush with your favorite sauce. Serve immediately with the roasted vegetables and dip. Enjoy! The Iced Coffee Recipe: Ingredients: 2 tablespoons instant coffee powder 3 tablespoons sugar/sweetener of choice 2 cups milk whole, non-fat, or almond milk ½ cup ice Method: In a high-speed blender just add all the ingredients and blend on high for a good 30 seconds. Taste and adjust to your liking. Pour it into a glass and serve right away.
