Bake at 375F for 20-25 minutes. For Icing: 1 brick of soft silken tofu 1.5 tbsp maple syrup & stevia to keep cals low 1/2 tsp pumpkin spice 1 tsp vanilla extract 1/2 tsp cinnamon 1/2 cup pumpkin puree. Blend everything till smooth. Once baked oats have cooled down, pour on top and spread evenly. Lunch: Recipe makes 6-7 servings Calories per 300g bean mixture, 1 protein tortilla (140 cals), 50g Tofu Mayo Calories:566, Protein: 45g, Carbs: 67g, Fat: 15g For Bean mixture: 1 block 350g extra firm tofu pressed About 4 cups cooked/drained kidney beans 1 medium size onion diced 1 small red bell pepper diced 1/3 cup GF oat flour 1 tsp cumin powder 1.5 tsp chipotle seasoning 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 2 tbsp soy sauce 1 tbsp ketchup 1 tbsp maple syrup 1 tbsp tomato paste 1 tbsp grainy mustard Spread mixture thinly and pan fry with slight oil on non stick frying pan on a low/medium heat. Tofu Mayo: 200g (about 1/2 a brick, or make more per need) Firm silken tofu 1 tbsp white vinegar 1 tbsp maple syrup salt per taste and blend. Once blended add 2 tbsp chopped red onion, 1/4 cup chopped dill pickle, 1 tbsp mustard, 1 tbsp ketchup. Mix everything. Adjust everything per taste. Dessert/Snack: calories 1 bliss ball (about 30g serving) Calories: 102, Protein 4g, Carbs: 8g, Fat: 8g 1 cup (100g) almond flour 1/2 cup (100g) pumpkin puree 2 tbsp (15g) powdered peanut butter 1 (15g) tbsp natural peanut butter 1.5 tbsp maple syrup & stevia pinch of sea salt 1 tsp pumpkin spice, 1/4 tsp cinnamon 30g dark choc chips Mix everything in a bowl. Add choc chips and roll them in a ball. Pasta makes 3 servings Calories per 500g pasta with seitan hot dog Calories: 526, Protein: 50g, Carbs:82g, Fat:4g 255g dry red lentil pasta (cooked/drained) about 2 cups baked butternut squash 2 large tomatoes 6-8 cloves of roasted garlic 3 sprays of Avo, add salt & black pepper on butternut squash/tomatoes. Bake at 450F for about 30 minutes or till soft. 2 cups cooked kale 250g chopped seitan hot dog (home made or store bought) For butternut squash sauce: 2 tsp club house roasted garlic & red pepper seasoning 1 tsp chili flakes 20g raw cashes (optional) salt per taste 1 tbsp dried or fresh basil You may add nutritional yeast. I didn't have any. roasted garlic, butternut squash (skin removed), roasted tomatoes 1.5 -2 cups reserved pasta water to blend.
