Depending on the size of your Topf (pot), adjust ingredients so that they will fit when cut into bite size pieces. Wash, top, destem, destone and cut-up fruit into bite sized pieces. Weigh the total of the fruit, then place into your sparkling clean container. Add one half the total weight of the fruit to the in sugar pot. (Example, if you have 1 pound of fruit, you will weigh out 1/2 pound of sugar. This can be white or brown sugar, or a mixture of both. Use your favorite. Then, pour over rum filling container to about one inch over the top of the fruit. It should all be submerged. Shake the container or stir to help release any air bubbles that are trapped and to help dissolve the sugar. If it does not all dissolve, it is fine, it can be stirred later before serving. Cover with an airtight lid or plastic wrap. Allow to sit in a cool dark place for 4-6 months before serving. To serve, mix well and ladle into cups, adding some fresh fruit as a garnish.
