Newriyo (also spelled Neurio or Nevriyo) is a traditional sweet snack popular in Mangalorean and Goan cuisine, especially during festive occasions like Christmas (Kuswar) or Diwali. These are sweet fried dumplings filled with a mixture of coconut, semolina, sesame seeds , and sometimes dry fruits or spices. Newriyo Recipe (Mangalore Kuswar) Ingredients For the Dough: 2 cups all-purpose flour (maida) 2 tablespoons semolina (rava) 2 tablespoons ghee or oil A pinch of salt Water (as required) For the Filling: 1 cup grated fresh coconut 1 cup sugar ( powdered) 1/2 cup rava 1/2 teaspoon cardamom powder 3 tablespoons chopped cashews (optional) 2 tablespoons raisins (optional) 2 tbsp white sesame seds 1tbsp black sesame seeds 1 tbsp poppy seeds For Frying: Oil for deep frying Instructions Prepare the Dough: In a mixing bowl, combine the all-purpose flour, semolina, ghee (or oil), and salt. Mix well until the mixture becomes crumbly. Gradually add water and knead into a firm, smooth dough. Cover the dough with a damp cloth and let it rest for 20–30 minutes. Prepare the Filling: In a pan, add grated coconut and dry roast. Dry roast white sesame seeds, black sesame seeds, poppy seeds, semonina fry cashewnuts in little ghee Allow it to cool completely. then add sugar and cardamom powder Assemble the Newriyo: Divide the dough into small lemon-sized balls and roll them into thin circles (about 4–5 inches in diameter). Place a spoonful of the filling on one half of the circle. Fold the circle into a semicircle, covering the filling. Press the edges to seal. Use a fork or crimp the edges for a decorative finish. Fry the Newriyo: Heat oil in a deep frying pan on medium heat. Fry the prepared Newriyo in batches until they turn golden and crisp. Avoid overcrowding the pan. Remove and drain on paper towels to absorb excess oil. Serve: Let them cool and store in an airtight container. Newriyo can be enjoyed as a festive treat or sweet snack!
