A true comfort dish, perfect for cozy evenings and slow cooking days. ✨ Ingredients 500 g beef, cut into chunks Salt and black pepper 2 tbsp olive oil 1 onion, chopped 2 garlic cloves, minced 1 carrot, chopped 1 yellow + 1 green bell pepper, chopped 3 tbsp flour 440 ml Guinness (or dark beer style base) 3 tbsp tomato paste 250 ml beef broth 2 bay leaves 1 sprig fresh thyme 🧑🍳 Preparation Season beef with salt and pepper. Heat oil in a pot and sear the beef on all sides until golden. Remove and set aside. In the same pot, sauté onion and garlic until fragrant. Add carrots and bell peppers, cook for 2–3 minutes. Stir in flour and cook for 1 minute. Pour in Guinness, beef broth, and tomato paste. Stir until smooth. Add thyme and bay leaves, return beef to the pot. Cover and simmer on low heat for about 2 hours, until the beef becomes tender and the sauce rich and glossy. Serve warm with mashed potatoes or fresh country bread — every spoonful melts with flavor.
