Today we are making smoked Scotch Eggs on the Old Smokey Grill. We will start with some hard-boiled eggs, wrap them in breakfast sausage, then season and get on the grill. We are using brandy wood for the smoke on these Scotch Eggs and then finishing them with a Carolina BBQ sauce. Ingredients • 4 hardboiled eggs • 1 lb ground sausage • 2 teaspoons Jack Stack All-Purpose BBQ Rub, more info here https://www.armadillopepper.com/produ... • Torchbearer Carolina BBQ Sauce, more info here https://www.armadillopepper.com/produ... • 1-2 teaspoons Worcestershire sauce • 2 teaspoons red chile flakes (optional) Recipe Instructions 1. Divide the sausage into 4 equal amounts and spread flat. 2. Place a hardboiled egg on the sausage and wrap the egg in the sausage. Complete for the other 3 eggs. 3. Sprinkle each sausage-wrapped egg with Worcestershire sauce, then roll the sausage-eggs around in the Worcestershire sauce. 4. Season with the Jack Stack All-Purpose rub. 5. Season with red chile flakes (optional). 6. Place over indirect heat at 275 degrees F and cook until done. This cook took about 1 hour. 7. Glaze with the Carolina BBQ sauce and cook for 7-8 minutes. Turn over the sausage eggs, glaze and cook for another 7-8 minutes. 8. Remove from the grill, let rest 10 minutes and serve!
