You will be totally satisfied. ⬇️⬇️English recipe follows⬇️⬇️ 蒜蓉蠔油炆雞翼(加蜂巢豆腐) 材料: 急凍雞中翼12隻 豆腐1磚 蒜頭8粒 薑1小舊 辣椒仔2隻 處理: 1. 豆腐,用保鮮紙包好,放冰格雪至硬身。 2. 雞翼,清水解凍。 3. 豆腐,連同保鮮紙,清水解凍。 4. 雞翼解凍後,加入粗鹽1茶匙,撈勻,醃10分鐘,去除雪味、腥味,及加入少許鹹味。 5. 蒜頭,去皮,清水洗乾淨。 6. 薑,去皮,洗乾淨。 7. 辣椒仔,去椗,打直1開2,去籽,洗乾淨。 8. 薑,切片。 9. 辣椒仔,切粒。 10. 蒜頭,切碎,拍鬆。 11. 雞翼,清水洗乾淨,擎乾水,廚紙索乾。 12. 雞翼調味: a. 蒜蓉半茶匙 b. 胡椒粉適量 撈勻,醃10 分鐘。 烹調: 1. 大火在鑊內燒熱油1湯匙。 2. 爆香薑片及蒜蓉。 3. 雞翼,在鑊內煎1分鐘。 4. 轉慢火,加入調味料: a. 蠔油1湯匙半 b. 生抽半湯匙 c. 冰糖2粒 加入滾水蓋過雞翼面,冚蓋,大火滾起。 5. 豆腐,切大粒。 6. 加入老抽半湯匙在雞翼內,加深顏色。 7. 加入豆腐,炆至收汁。 8. 上碟,灑上蔥粒及辣椒粒。 9. 完成,可享用。 Braised chicken wings with garlic sauce and oyster sauce (with tofu) Ingredients: Frozen chicken wings 12 Nos. Tofu 1 cube Garlics 8 Nos. Ginger (small) 1 No. Chili 2 Nos. Preparation: 1. Tofu, pack with wrap cling. Put into freezer until it turns hard. 2. Chicken wings, defrost in tap water. 3. Tofu, with plastics, defrost in tap water. 4. Chicken wings have been defrosted, add in 1 tsp of cooking salt. Mix well. Season for 10 minutes, remove the unpleasant smells and add some salty tastes to them. 5. Garlics, get them peeled. Rinse with tap water. 6. Ginger, get it peeled. Rinse with tap water. 7. Chili, cut its anchors. Divide each into 2 shares vertically. Remove seeds. Rinse with tap water. 8. Ginger, get it sliced. 9. Chili, dice in cubes. 10. Garlics, chop well. Beat well. 11. Chicken wings, rinse thoroughly. Drain. Dry with kitchen towels. 12. Season the wings: a. Garlic sauce 0.5 tsp b. Pepper appropriate amount Mix well. Season for 10 minutes. Steps: 1. Heat up 1 tbsp of oil at high flame in wok. 2. Fry ginger and garlics well. 3. Chicken wings, fry for a minute in wok. 4. Turn to low flame, add seasoning: a. Oyster sauce 1.5 tbsp b. Light soya sauce 0.5 tbsp c. Rock sugar 2 cubes Add in boiled-up water just covering up the wings. Cover up the wok. Heat up at high flame. 5. Tofu, dice in big cubes. 6. Add in 0.5 tbsp of dark soya sauce in the wings, to enrich the colour. 7. Add in tofu, braise until the sauce becomes thick. 8. Put on plate. Put green onion and chili cubes on top. 9. Complete.
