Prepare Soya Chunks Boil water with ½ tsp salt. Add soya chunks and boil 5–7 minutes. Turn off heat, cover 5 minutes. Wash with cold water and squeeze well (very important so smell goes away). 2. Cook Masala Heat oil in a pot. Add cumin seeds → let them crackle. Add sliced onion and fry till golden brown. Add ginger-garlic paste and cook 1 minute. Add tomatoes, red chili, turmeric, coriander powder, and salt. Cook (bhunai) until oil separates. 3. Add Shaljam & Soya Add turnip cubes and mix well. Add soya chunks and green chilies. Cook 3–4 minutes on medium flame. 4. Simmer Add 1½–2 cups water Cover and cook on low heat 20–25 minutes (until shaljam becomes soft and curry slightly thick) 5. Final Touch Sprinkle garam masala & black pepper Cook 3 more minutes Garnish with coriander & ginger 🍽️ Serving Serve hot with: Roti Chapati Or steamed rice 💡 Tip: If you like less turnip smell, add 1 tbsp yogurt during masala cooking — it balances the taste perfectly.
