As bourbon ages, a portion of the liquid is lost from the barrel due to evaporation— this is called the "Angel's Share". This evaporated spirit is lost forever; gone to the heavens for an almighty party (or a party with the Almighty). After maturation the bourbon is emptied out of the barrel and a certain amount of whiskey is left trapped within the wood itself. We call that the "Devil's Cut".
