I earn a small commission at no extra cost to you. https://amzn.to/4jvUDWF KitchenAid Cordless Hand Mixer RECIPE: Ingredients: • 5 medium egg yolks • Pinch of salt • ½ cup sugar • 2 ½ cups heavy cream • 2 tsp vanilla extract • ¼ tsp orange extract • Granulated sugar (for topping) • Optional: Fresh strawberries or other fruit for garnish ________________________________________ Instructions: 1. Preheat oven to 320°F (160°C). In a medium bowl, whisk together egg yolks, salt, and sugar until smooth. 2. In a medium saucepan, combine cream, vanilla extract, and orange extract. Heat over medium, stirring often, until it just begins to boil. Remove from heat and let sit for 3–5 minutes. 3. Temper the eggs: Slowly drizzle about ¼ cup of the hot cream into the egg mixture, whisking constantly. Then, gradually stir in the remaining cream mixture, continuously stirring to prevent the eggs from curdling. 4. Let the mixture settle, then skim off foam from the top. 5. Pour mixture into 5 ramekins. Place the ramekins on a baking sheet. Carefully pour very hot water into the baking sheet until it reaches about halfway up the sides of the ramekins. 6. Bake for 25–35 minutes, or until the centers are just slightly jiggly when gently shaken. 7. Remove from oven. Let cool at room temperature, then refrigerate for at least 3–4 hours (or overnight for best results). 8. Before serving, sprinkle a thin layer of granulated sugar over each custard.
