I remember growing up in West Virginia, Mom would make fresh peas and new potatoes from our garden for supper. It was an inexpensive side dish to make, so we had it often. Nothing beats this creamy dish, and it was always a family favorite. Fresh peas and potatoes have their own unique flavors. Once combined with the creamy white sauce, it’s hard to resist a second serving! Tired of the same old mashed potatoes, give this dish a try for your family. It will become one of their favorites. RECIPE: Ingredients: 1 lb. small potatoes – Yellow Yukon or White 1 can of peas In this video, I doubled the flour and milk because I had more than 1 lb. of potatoes: 1 tbsp all-purpose flour 1 cup milk Salt & Pepper to taste Directions: Place potatoes in a large pot with salted water. Bring to a boil. Reduce the heat and simmer until potatoes are tender but not breaking apart. Add butter to a medium saucepan and melt. Turn the heat to low and add flour, salt, and pepper, stirring constantly to create a thick paste. Gradually add milk and cook over low to medium heat until thickened, making sure to stir constantly so the paste doesn't stick or burn. Once potatoes are cooked, drain and transfer to a serving bowl. Heat the peas in the microwave for 1 minute and add to the potatoes. Pour the white sauce over the potatoes and peas. Add salt, pepper, and parsley to taste. Stir and serve.
