"Bimal’s favorite thing to do when he’s at home and not shooting is to watch TV series. He sometimes even forgets to eat! When I asked him what he wanted for dinner, he said, ‘How about string hoppers?’ So, I decided to make rice flour string hoppers with his favorite yellow coconut sambal made with dried baby shrimp. First, I put 2 cups of white string hopper flour in a mixing bowl and added about a teaspoon of table salt. Then, I gradually added lukewarm water, mixing with a spoon until it formed a paste. Once it reached a non-sticky texture, I poured the flour mixture into the string hopper maker and then into the string hopper trays, which I had brushed with a bit of coconut oil. After that, I placed the trays in the steamer to cook. When they were ready, I removed the string hoppers from the trays and placed them on a plate. Then I scraped the coconuts needed for the yellow coconut sambal and set them aside. Next, I washed some green chilies, rampe, curry powder, and garlic, then put them all in a blender and ground them finely. The mixture was transferred to a clay pot. To this, I added well-washed, steamed dried baby shrimp, turmeric powder, chili powder, goraka, and salt. I added enough water to cover everything and placed it on the stove, lowering the heat while it cooked. Meanwhile, I put grated coconut in the blender, added finely chopped red onions and turmeric powder, and ground it well. I added the ground coconut to the boiling mixture on the stove and stirred it with the handle of the spoon until the liquid settled and the coconut mixture was tempered. Then, I removed it from the stove. I didn’t forget to squeeze a little bit of lime at the end to make the yellow coconut sambal even more delicious. The smell of the coconut sambal made me so hungry! I told Bimal to come down before the food got cold; otherwise, he wouldn’t come down in time.
