“Street food, traditional Thai, contemporary cuisine — it’s not a fight. It’s coexistence.” That idea became the thread running through Bars, Restaurants and Concepts (BRAC), the prequel to Thailand Tourism Forum 2026, where food was only the starting point for a much bigger conversation about experience, people, space, and sustainability in F&B. “We’re here to talk about restaurants, bars, concepts, and the hospitality shaping tomorrow’s future in F&B,” said Sumi Soorian, Founder of Mrs B Group, as she welcomed the room. “This is an inspiring gathering of community.” Beside her, Rohit Sachdev, CEO of Soho Hospitality, framed the momentum: “There’s a lot happening across the industry — and it’s all connected.” The connection surfaced immediately in Thai Food Fight, where Chef Supaksorn ‘Ice’ Jongsiri challenged the premise itself. “Street food is what we grow up with,” he said. “Traditional food has been there for a long time. Contemporary changes — like fashion — but it can still be Thai.” From Michelin-starred kitchens to roadside grills, the message was clear. “Tourists don’t come to Thailand to eat just one thing,” he added. “They experience all three. That’s why they come back.” From taste, the focus shifted to feeling. “You remember the food,” said Eva Lin, Design Director at AvroKO, “but you remember the mood even more.” Patricia Ho Douven, Founder of White Jacket, agreed: “Mood isn’t one ingredient. It’s a combination, like a dish.” Without story, she warned, “drama is just noise.” The future of the industry came into sharper focus with Gavin Vongkusolkit, Director at The Food School Bangkok. “A restaurant is not an easy business,” he said. “Creativity matters — but discipline, resilience, consistency, care, and character are what keep it alive.” Space itself was redefined through the idea of the third place. “It’s not just physical,” said Rohit Sachdev. “It’s emotional. It’s about connection, community, and frequency — not just transactions.” And when the conversation turned to performance, Charlotte Whalley, Founder of Table 12 Consultancy, delivered the grounding truth: “You are standing on a mountain of value. The problem isn’t data — it’s insight.” BRAC didn’t try to predict the future of hospitality. It revealed how Thailand is already building it — one experience at a time.
