Chicken Recipes are many people's go-to for a healthy and quick weeknight dinner. But often chicken can be repetitive and bland. So I’m transforming a few classic chicken meals (Chicken Sandwich, Chicken Stir Fry, Chicken Pot Pie) into unique modern experiences using some Asian twists and spices. Everything comes together in about 30 minutes or less and you'd be amazed at how easy it is and delicious it all will taste! Turn on the heat to medium and stir until the butter has fully melted and the sauce thickens slightly. Turn off heat and set aside. SPICY KOREAN CHICKEN SANDWICH RECIPE: 2-3 small chicken breasts hamburger bun mayo tomato slices lettuce pickles In 3 bowls, add each of the following separately: 1/2 cup flour + 1 teaspoon salt + fresh crack black pepper 1 egg + 1 tablespoon water 1 cup panko Dip the chicken in flour, then egg mixed with water, and then in the panko. Add to a baking rack on a baking sheet and bake at 375 for 10 minutes. Remove and dip into the gochujang buffalo sauce until covered. Transfer back onto rack and bake for another 10 minutes until cooked through. On a hamburger bun, slather mayo, top with lettuce, chicken, tomatoes, pickles and enjoy! We like it served an ice cold beer. Ahhhh! CHICKEN VEGGIE STIR FRY RECIPE: Soy Honey glaze 2 teaspoons grated ginger 2 tablespoons honey 3 tablespoons soy sauce 2 tablespoons rice vinegar 1 tablespoon water In a bowl, combine all of the ingredients above and set aside Chicken: 2 chicken breasts, sliced into thin strips 1 tablespoon cornstarch 1 teaspoon kosher salt fresh cracked black pepper 1/2 onion, chopped 3 cloves garlic, minced 1 cup sliced mushrooms 1 zucchini, sliced into 1 inch thick 2 cups snow peas Combine the chicken with cornstarch, salt, and black pepper. Mix so it’s thoroughly coated with the cornstarch and set aside for 10 minutes. In a large wok, add oil and let it get hot and add chicken and cook for 3 minutes until almost cooked through. Add onion and garlic and stir. Add the vegetables all at once and then the soy honey glaze. Continue stirring everything in hot wok for another few minutes just until the vegetables are par cooked and softened, about 3 minutes. If you want them a bit softer, keep cooking them until they’re how you prefer. Serve over rice with sauce and enjoy! THAI CURRY CHICKEN POT PIE RECIPE: 2 chicken breasts, cubed 1 small yellow potatoe, cubed 1 cup carrots, chunks 1/2 cup peas 1/2 yellow onion, chopped 1 bottle Trader Joe’s Yellow thai curry 1/2 cup coconut milk (from a can) 1 tablespoon fish sauce 2 teaspoons sugar Puff Pastry In a medium pot, add oil and saute onions. Add chicken breasts and a pinch of salt and cook for 3 minutes. Add carrots, potatoes, peas and continue to cook for another 3 minutes. Add yellow curry sauce, coconut milk, fish sauce, and sugar and mix well. Continue to let it simmer for another 5 minutes. Transfer to ramekins and top with puff pastry just enough to cover the ramekins. Bake at 425 for 15 minutes or until puff pastry has puffed up and is golden brown. Remove from oven and let cool for 5 minutes. Serve with favorite green salad.
