Ingredients: 500g mutton (bone-in or boneless) 1 large onion, chopped 2 tomatoes, chopped 2 tablespoons ginger-garlic paste 1 tablespoon ghee or oil 2 tablespoons yogurt 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon coriander powder 2-3 whole black peppercorns 1-2 bay leaves 1-2 cinnamon sticks 4-5 cloves 1 star anise (optional) 1 tablespoon garam masala Salt to taste Fresh coriander leaves for garnish 1 liter water (adjust for desired consistency) Recipe Steps: Prepare the Mutton: Wash the mutton pieces thoroughly and set aside. If you’re using bone-in mutton, it will add more flavor to the soup. Make the Base: Heat ghee or oil in a pressure cooker or a large pot. Add the bay leaves, cinnamon, cloves, and star anise (if using) to temper the spices. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for another minute until fragrant. Cook the Mutton: Add the chopped tomatoes to the pot, cooking until they become soft. Add the mutton pieces and sear them until they brown slightly on all sides. Add the turmeric, red chili powder, and coriander powder. Stir well to coat the mutton with the spices. Add Yogurt and Broth: Add yogurt to the pot and mix well. Let the mutton absorb the flavors for a few minutes. Pour in water and bring the soup to a boil. Reduce the heat, cover the pot, and simmer for about 40 minutes in a pressure cooker or 1.5 to 2 hours in a regular pot, until the mutton is tender and the soup has thickened.
