Cookies and Cream Cupcakes Recipe: Ingredients: For the cupcakes: 15 oz chocolate cake mix 5.9 oz instant chocolate pudding 4 eggs 3/4 cup olive oil 3/4 cup water 1 cup sour cream 1 and 1/2 cups crushed Oreo cookies For the frosting: 1 cup unsalted butter, softened 3 cups powdered sugar 1/2 teaspoon vanilla extract 1 Tablespoons heavy whipping cream 3/4 cups crushed Oreo cookies Instructions: For the cupcakes: 1. Preheat the oven to 350°F degrees. 2. Add the cake mix and the dry pudding mix in the bowl of an electric mixer. Stir in the eggs (one at a time), and add oil, water, and sour cream mixed well. 3. Fold in the crushed Oreo cookies with a spatula. 4. Fill the Bake cups 2/3 full of batter. 5. Bake 20 minutes. 6. Remove from the pans and transfer to a cooling rack. Cool completely. For the frosting: 1. Place the softened butter in the bowl of an electric mixer. 2. Add the powdered sugar, 1 cup at a time, use low speed. 3. Add in the vanilla and heavy cream. 4. Increase the mixer speed to medium and beat 5 minutes. 5. Fold in the crushed cookies with a spatula.
