Raised beef roast with mashed potatoes and corn dinner  Make this on a cold day to warm the soul 😁 The steak 2 1/2 pounds flat iron steak or at least one and a half to 2 inches thick… you can also use beef pot roast. Kosher salt and fresh ground pepper to taste 1 1/2 tablespoons olive oil oil 1/4 cup all-purpose flour 1 large white onion, diced 1 large carrot, peeled and diced. 1 stock, celery, diced 3 cloves of garlic, minced 2 cups dry red wine 1 1/2 cups, canned crushed tomatoes 2 cups prepared beef broth 6 sprigs, fresh thyme To prepare the steak, preheat the oven to 325°F. Season the steak with salt and pepper. Hit the oil in a large, heavy bottom oven proof sauce pan with a tight fitting lid over medium high heat. Dust the steak with the flour and carefully place in the pan. Sear for three minutes on each side or until nicely browned. Remove the steak and set aside on a clean platter. Add the carrot, onion, celery, and garlic to the pan and continue to sauté for 8 to 10 minutes. Add the red wine and the glaze the pan using a wooden spoon to scrape any solids off the bottom. Reduce the liquid by half, and then add the crushed tomatoes. Reduce for another minute. Add the beef broth and thyme, and return the cooked steak to the pan. Cover the pan with the lid and place it in the oven for about 2 1/2 hours or until the meat is forktender.
