Easy & Delicious Keto Banana Bread Recipe | Type 1 Diabetes | Two Years Later Two years ago today - November 19, 2023 - my daughter was diagnosed with Type 1 Diabetes at 7 months old. She was in a coma. I thought her childhood was over. Three weeks ago, I made this banana bread. It’s easy. It’s delicious. And her blood sugar stayed stable for HOURS. For the first time since diagnosis, I felt hope. This is that recipe. This is our story. This is Rosy & Real. Two years ago today - November 19, 2023 - my daughter was diagnosed with Type 1 Diabetes at 7 months old. She was in a coma. I was afraid she’d never be able to eat the things we take for granted, like banana bread. Three weeks ago, I made this banana bread. Her blood sugar stayed stable for HOURS. For the first time since diagnosis, I felt hope. This is that recipe. This is our story. This is Rosy & Real. 🍌 COMPLETE RECIPE: WET INGREDIENTS: • 2 medium-large ripe bananas (~225g / 8 oz mashed) • 2 large eggs (~100g / 3.5 oz) • 1/3 cup powdered monk fruit sweetener (~65g / 2.3 oz) • 1 tsp vanilla extract (5ml) DRY INGREDIENTS: • 2.5 cups superfine blanched almond flour (250g / 8.8 oz) • 1 tsp baking soda (5g) • 1/2 tsp baking powder (2.5g) • 1/4 tsp salt (1.5g) SPICES: • 1 tsp canela/cinnamon (3g) • 1/4 tsp nutmeg (0.5g) • 1/8 tsp ground clove (0.25g) • 1/8 tsp allspice (0.25g) INSTRUCTIONS: 1. Preheat oven: • 375°F (190°C) for high altitude (Mexico City - 7,350 ft) • 350°F (175°C) for sea level 1. Prepare pan: • Grease 9x5 inch loaf pan/muffin tin OR line with parchment paper 1. Mash bananas: • In large bowl, mash 2 bananas until mostly smooth 1. Mix wet ingredients: • Add eggs, monk fruit sweetener, vanilla to bananas • Whisk until well combined 1. Mix dry ingredients: • In separate bowl, combine almond flour, baking soda, baking powder, salt, and all spices • Whisk together well 1. Combine: • Fold dry ingredients into wet ingredients • Mix until just combined - don’t overmix! 1. Bake: • Pour batter into prepared pan • Smooth top with spatula • Bake 55-65 minutes (high altitude) or 50-60 minutes (sea level) • Test with toothpick - should come out clean or with moist crumbs 1. Cool: • Cool in pan 10 minutes • Remove to wire rack • Cool COMPLETELY before slicing…or not! MAKES: 1 loaf (8-12 slices depending on how you cut) 📊 NUTRITION (per slice, 8 slices): • Net Carbs: 9-10g • Protein: 8g • Fat: 15g • Fiber: 4g • Calories: 227 Compare to regular banana bread: 75% fewer net carbs! 🏔️ HIGH-ALTITUDE NOTES (7,350 ft / Mexico City): • Bake at 375°F (not 350°F) • Bake longer (55-65 minutes vs 50-60) • Both baking soda AND baking powder needed • Don’t overmix (more important at altitude!) 💡 TIPS FOR SUCCESS: • Use RIPE bananas (brown spots = sweeter!) • Use superfine BLANCHED almond flour (not almond meal!) • Use POWDERED monk fruit (not granulated!) • Don’t overmix after combining wet and dry • Cool COMPLETELY before slicing (or it will crumble) • Weigh almond flour for best accuracy 📦 STORAGE: • Room temperature: 2-3 days (covered) • Refrigerator: 5-7 days (airtight container) • Freezer: Up to 3 months (slice first, wrap individually) 🩸 FOR TYPE 1 DIABETES: • Test your individual blood sugar response • Pair with protein/fat (butter, nut butter) for even more stability • Monitor CGM closely first time • Adjust portions as needed for your body 💙 OUR RESULTS: My daughter’s blood sugar stays stable for HOURS after eating this.
