Cookbooks on Amazon: https://amzn.to/3Cx4xpE MASTER COOKBOOK RECIPE #72 ROAST, CHUCK - PRESSURE COOK Ingredients: chuck roast 1/4 cup brown gravy mix 2 tsp steak seasoning, Weber steak-n-chop salt & pepper 1/4 cup all-purpose flour 1/8 cup olive or cooking oil 4-5 shakes Worcestershire sauce if using a lean cut of meat, add 1/4 stick of butter water Instructions: Remove the roast from the fridge for 30 minutes to an hour before cooking. If it is larger than your pressure cooker, cut it in half before seasoning and browning—season with brown gravy mix, steak seasoning, salt, and pepper. Lightly coat with flour. Heat oil in the cooker, then brown the meat on all sides over medium-high heat. Add Worcestershire sauce and then add enough water so that it is about an inch below the top of the contents. Bring the contents to medium pressure and cook for 40 minutes. Check if it is tender; if not, cook for another 20 minutes. Thicken juices with cornstarch and milk as instructed. 1/2 cup cold milk 3 heaping Tbsp cornstarch or 6 heaping Tbsp flour To thicken broth with gravy, whisk together milk and cornstarch. Whisk very well until all the starch is combined. Pour into the roast. Cook at a higher temperature until the sauce thickens. This recipe can be prepared in an Instant Pot using the same cooking time and pressure settings.
