Here is the mill I use in the video: https://collabs.shop/o7fbw7 Here are the Soft White Berries I used: https://collabs.shop/vzvivg The kitchen scale I used: https://collabs.shop/draqqh Flaky Biscuit recipe Ingredients 270 grams or 2 1/4 cups freshly milled whole wheat flour sifted 1 tablespoon baking powder 1/2 teaspoon salt 1 teaspoon sugar 1 stick cold butter cut into small pieces ¾ cup cold milk 1 tablespoon heavy cream 1 whole egg Instructions 1. Preheat the Oven: Set your oven temperature to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease a cast iron skillet. 2. Prepare the Dry Ingredients: In a large bowl, combine the sifted whole wheat flour, baking powder, baking soda, and salt. 3. Cut in the Butter: Add the cold butter pieces to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs. 4. Add the Wet Ingredients: Pour in the cold buttermilk and honey (if using). Stir with a wooden spoon until just combined. The dough will be slightly sticky. 5. Shape the Dough: Turn the dough onto a lightly floured surface. Gently knead it a few times to bring it together. Pat the dough into a rectangle about ¾ inch thick. 6. Cut the Biscuits: Use a biscuit cutter or a drinking glass to cut out biscuits. Place them on the prepared baking sheet or skillet, touching slightly for soft sides or spaced apart for crispier edges. 7. Bake: Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown. Lift a “flap” off of the center biscuit to see that it is fully baked. 8. Serve: Remove from the oven and let cool slightly. Serve warm with butter, homemade gravy, or your favorite jam. Sausage Gravy recipe: Ingredients One pound ground breakfast sausage 3 Tablespoons canola oil ½ cup all purpose flour 4 cups milk 1 teaspoon salt 1 teaspoon pepper (I use more, you cannot over pepper sausage gravy, in my opinion) Directions 1. In large saucepan or cast iron skillet, brown sausage on medium heat. 2.Stir in oil. Then add flour and stir frequently over medium heat to allow flour to brown. This will take time, be patient, this is where flavor develops. I usually let it cook at least ten minutes. (You might be afraid your flour is sticking to the bottom of the pan—it’s okay, just keep stirring and all will be well when you add the milk.) 3.Once flour is browned, add milk, salt and pepper, and continue to stir until thick and bubbly. 4.Turn to low heat and allow to simmer for 5 minutes, stirring constantly. 5. Remove from heat, finish seasoning to taste and you’re ready to go. Fried Apple Recipe: Ingredients 3 cups apples, peeled and slicedPinch salt3 Tablespoons sugarPinch of cinnamon (optional) Squeeze of fresh lemon juice (optional) Directions 1.Heat butter in well-seasoned cast iron skillet or nonstick pan. 2. Add apples and remaining ingredients to pan and sauté on medium heat until slightly browned and tender. Getting a little brown on these really amps up the flavor! 3. Remove from heat and serve warm or at room temperature.
