Written Recipe Ingredients: For frying the eggs v Eggs – 8-10 (preferably large) Ghee – 1 tbsp Turmeric powder – ¼ tsp Red chili powder – 1 tsp Salt – ¼ tsp (adjust to taste) For the gravy : Ghee – 2 tbsp Cumin seeds – ½ tsp Cloves - 3-4 Black cardamom – 1 Green cardamom – 3-4 Dalchini (cinnamon) – 1-inch piece Bay leaf – 1 Onions – 3 medium, Ginger-garlic paste – 1 tbsp Green chilies – 3, Dry spices Chili powder – 2 tsp Paprika powder – 1 tbsp Coriander powder – 2 tbsp Cumin powder – 1 tsp Turmeric powder – ½ tsp Salt – 1 tsp (adjust to taste) Tomato – 3 Water – ¼ cup + ½ cup Kasuri methi – 1 tsp, Fresh coriander leaves – finely chopped Fresh ginger – finely chopped Green chilies – for garnish Method : 1. Prick the boiled eggs all around using a fork or toothpick. This helps the eggs absorb the spices better while cooking. 2. Heat 1 Tbsp ghee in a pan. When warm, add turmeric powder, red chilli powder, and salt. 3. Add the boiled eggs and mix gently until the eggs are well coated with the spices. Switch off the stove and keep the eggs aside. 4. Heat oil in the same or another pan. Add cumin seeds, cloves, black cardamom, green cardamom, cinnamon, and bay leaf. Let the whole spices splutter and release their aroma. Add finely chopped onions and sauté until they turn golden brown. 5. Add ginger-garlic paste and green chillies. Sauté well until the raw smell disappears. 6. Add red chilli powder, paprika powder, coriander powder, cumin powder, salt, and a little water. Mix well and cook the masala for a minute. 7. Add tomato purée and some water. Mix, cover, and cook on low to medium heat for about 30 minutes until the masala is well cooked and oil starts separating. 8. After 30 minutes, add ½ Tbsp ghee and about ½ cup water to adjust the consistency. Mix well and let it cook. 9. Now carefully add the fried eggs along with chopped green chillies, ginger, crushed kasuri methi, and chopped coriander leaves. 10.
