By using these links, you are not being charged any extra money SPAGHETTI SALAD spaghetti 0.93 tomatoes 1.50 cucumbers 0.42 TOTAL= $2.85 Dressing for salad 1/4 cup red wine vinegar 1/4 cup oil of your choice ( I used EVOO) 1/2 tsp garlic powder 1/4 tsp oregano ( I used ground oregano because that's what I had) 1 tsp basil salt and pepper to taste add 1- 2 tsp of sugar or more to your liking. *If you want you can double this recipe and keep remainder for other salads. If you are trying to conserve resources, make this and see if it is enough for your liking depending on the number of servings PASTA COOKING METHOD add pasta to boiling water that has been seasoned with salt, stir to make sure it doesn't clump together. Remove from heat and cover with lid. Set timer to desired level of consistency. For Al Dente with the La Moderna noodles I used, it was 7 minutes. For spaghetti salad, drain and rinse with cool water. Make sure it is drained well and dried out a little before adding dressing SPAGHETTI ALLA NERANO spaghetti 0.93 2 zucchini 1.77 TOTAL = $2.37 Deep fry zucchini in oil until lightly brown. Remove and drain, then refrigerate covered for at least a few hours. Start cooking pasta in salted water. Add zucchini back to pan with a little oil then add a little pasta water and cook until zucchini starts breaking down. Help it along with a spoon or other device, helping to break up the zucchini. Keep adding pasta water until it is to the desired consistency then toss with spaghetti. If you have butter, add a little in when you are cooking the zucchini. Top with parmesan cheese if you have it. I think tomatoes would be good in this or serve it with some garlic bread with marinara. This will help to balance the dish.
