A Madeira Cake is a simple and delicious sponge cake that is more dense and more buttery. But, we just had to do more than just a simple cake this time as well! So, a Lavender Cake with a peach filling was something very interesting to us. Thus, we present to you our version of a *Lavender & Peach Madeira Cake*! THANK YOU Ingredients: Madeira Cake:- For a Madeira Cake's, measurements should be 1:1:1 ratio of butter, sugar and flour; hence using grams is much more accurate. Sugar 400g Plain Flour 400g Unsalted Butter 400g Eggs 6 Vanilla Extract 2 tsp Milk 2 tbsp Lavender Oil 6 - 8 drops Salt 1/4 tsp Baking Powder 1 1/2 tsp Purple Food Colour (optional) Filling:- Peach Jam Canned Peaches 410g Buttercream Frosting:- Icing Sugar 4 cups/500g Unsalted Butter 3/4 cup/165g Vanilla Extract 2 tsp Salt 1/4 tsp Method: Madeira Cake:- Step 1:- To make the Madeira Cake, add sugar, butter and vanilla extract into a mixing bowl and mix well . Now add one egg at a time and mix it for a few seconds. Step 2:- Add the dry ingredients to the sugar and butter mixture through a sieve, sifting it well. Mix until just incorporated, DO NOT OVER MIX. Now mix the Lavender Oil, Purple Food Colour and Milk into the batter. Grease and line a 6 x 6 inch deep pan, pour the batter into the pan and spread it evenly. Bake in a preheated oven at 150°C for 2 hours or until a tooth pick inserted comes out clean. Step 3:- Once baked, let the cake cool for 10 minutes. Then, flip the cake over a wire rack to cool completely. Filling:- Step 4:- Drain the sugar syrup from the canned peaches. Chop the peaches and mash them into a mortar (you can using any other tool to mash the peaches). Buttercream Frosting:- Step 5:- Sift the icing sugar in a large bowl. In another large bowl, beat the unsalted butter until pale/whitish in colour and increased in volume. Step 6:- Add 1/3 cup of the icing sugar into the butter and beat for about a minute. Continue until all the sugar is incorporated into the butter. Add the Vanilla Extract and salt and mix it for a few seconds. Assembling the Cake:- Step 7:- Cut the dome of the cake. Now, cut the cake into 3 layers. Step 8:- On a cake board, spread a little buttercream at the centre of the cake board and place the first cake layer. Spread a thin layer of jam onto the cake, then pipe/add the buttercream and spread it evenly with a spatula. Now add 2 - 3 tbsp of the mashed peaches onto the buttercream and place another cake layer on top of it. Continue with the rest of the layers. Step 9:- Place the final cake layer and cover the cake with a thin layer of buttercream. Refrigerate for an hour or two.
