In the second part, the griddle remains broken, with only the right-hand side operational. Using an old steakhouse method, I cook burgers ahead, melt butter, and let them rest gently until needed. This approach worked far better during busy service. In the final part, the grill is fixed, everything resumes, and we conclude with a festive special. The Humbug Supreme — A pork burger with melted brie, cranberry chilli sauce, and crispy streaky bacon. This is a real kitchen, honest service, and real problem-solving. No shouting. No rush.
