Today’s Recipe: সহজ পদ্ধতিতে বানানো সবজির পুরভরা সুজির ইডলি/Stuffed Rava Idli/Vegetable Stuffed Sujir Idli Recipe Master Chef : Smt Rubi Ghosh #southindianrecipe #stuffedravaidli #sujiridlirecipe HISTORICAL BACKGROUND: There are several regional variations of idlis made in South India and Sri Lanka. With the emigration of south Indians and Sri Lankans throughout the region and world, many variations on idli have been created in addition to the almost countless local variations. Stuffed Rava Idli is a conventional South Indian dish. RAVA (Suji) IDLI is a speciality of KARNATAKA. TOOLS & APPLIANCES (used here): A. Samsung Smart Microwave Oven (from Amazon) B. Prestige Induction Cooker (Bought from Amazon) (https://www.amazon.in/dp/B00YMJ0OI8?r...) C. Hawkins Ceramic Nonstick Induction Fry Pan (from Amazon) (https://amzn.in/d/iK82OkI) D. Borosil Big Round Bowl (from Amazon) E. Idli Moulds (microwave proof) (from local market) F. Agaro Chef's knife (from Amazon) G. All other kitchen tools (mostly from Amazon) (A microwave or an automatic electric steamer can be replaced by conventional stove top steamers) INGREDIENTS & PREPARATION: TOAL COOKING TIME: 40 Mins incl. 20 mins for Preparation. A. MAKING of IDLI BATTER: Ingredients: a) 1 & 1/2 cup Sooji, b) Salt (add to taste) c) 1 tbsp Refined Oil. d) 1 & 1/2 cup Yogurt** e) 1 & 1/2 cup Water f) 1 tsp Baking Soda Preparation: i) In a fry pan, take Sooji, Salt & Refined Oil. Sauté under medium flame very lightly. Cool it. Pour in a big bowl. ii) Add Yogurt & Water. Mix well. (use Hand Beater for better smoothness.) Cover and rest for 20 mins. ** Dahi (yogurt) is added to provide the sour flavour for unfermented batter. iii) Add Baking Soda & mix well. (For the required consistency, add some more water) B. PREPARATION of STUFFING : Ingredients : a) 1 tbsp Refined Oil. b) 1 Dry Red Chilli, c) 1/4th tsp Cumin Seeds d) 1/4th tsp Black/white Mustard Seeds. e) 3 Tomatoes, 1 Onion, 1 Capsicum,1 Carrot, 2 Green Chilies (all medium sized & chopped) & 1 inch Ginger (chopped) f) Salt (add to taste), g) 1/2 tsp Sugar, h) 1/4th tsp each Turmeric, Cumin, Coriander & Kashmiri Red Chili Powder. i) 2 medium Potatoes (Boiled & Grated), j) 1 tbsp Tamarind Pulp, k) a few Coriander & Curry Leaves. Preparation : i) In a cooking pan, heat Refined oil. ii) Add Dry Red Chilli, Cumin Seeds & Mustard Seeds. Saute a little. iii) Add, as under, ,one after another, with a certain gap : Chopped Tomatoes, Onion, Capsicum, Carrot, Green Chilies & Ginger . Mix well. Sauté under medium flame for 2-3 minutes. iv) Add, as under, one after another: Salt, Sugar, Turmeric, Cumin, Coriander & Kashmiri Red Chili Powder. v) After 2 minutes, add grated Potato,Tamarind Pulp, Coriander & Curry Leaves. Mix all well. Smash & Stir well. Make it water free. Stuffing is ready. (for a stuffing look, see the video.) vi) Divide stuffing material into small pieces/dumplings. Give each piece a flattened round shape Lump. C. ASSEMBLE & STEAMING the IDLIS: Ingredients: a) sliced Tomatoes, b) Cashew Nuts c) Curry Leaves Preparation: Brush oil inside the idle Mould. At First, put a layer with 1 sliced Tomato, 1 Cashew Nut & 1 Curry Leaf at the bottom of each mould. Pour a layer of idli batter. Put one small lump of the filling. Top with another layer of batter. Put the idli moulds into the Micro oven and heat for 5 minutes. (or, Steam for 10-12 minutes. ) D. RAVA STUFFED IDLI is ready. Serve with Tomato Sauce/Samber/Chutni. VARIATIONS : (courtesy : WIKIPEDIA) • Masala Stuffed Idli: Stuffed of mashed potatoes, onions, and spices. • Vegetable Stuffed Idli: Stuffed of peas, carrots, or beans . • Sweet Stuffed Idli: Stuffed of coconut and jaggery. Nutritional Value of Stuffed Rava Idli: • Lower in calories than rice idli and is a good source of fibre. • Beneficial for regulating blood sugar levels and weight management. • Light and easy to digest.
