Then, Egg Chilli is made with Egg Pakora combining different sauces, vegetables and spices powder. Egg pakora can only be served as a snack with Tea or Coffee. Moreover, egg pakora curry itself is mouthwatering dish. I have prepared this Egg Chili from owing some steps from chilli chicken (Chinese Cuisine). I have prepared Gravy with various sauces. Then Egg Pakora is cooked with Gravy. (details are given below) TOOLS & APPLIANCES: (used here) A. Prestige Induction Cooker (purchased from Amazon) (https://www.amazon.in/dp/B00YMJ0OI8?r...) B. Hawkins 23 cm Diameter Ceramic Nonstick Fry Pan (from Amazon) (https://amzn.in/d/aCelfkV) C. Agaro Chef's knife (all-purpose for kitchen use) (From Amazon) D. All other kitchen tools (From Amazon/Local Market)) INGREDIENTS & PREPARATION : (Here Taken) Total Cooking time : 50 Minutes (incl. 30 mins for Preparation) A) HOW TO PREPARE A EGG BATTER : Ingredients: 1) 4 Scrambled Eggs 2) Finely grated Boiled Potato (1 big) 3) Finely Chopped 1 medium Tomato 4) Finely Grated Carrot (half of a big) 5) Paste of 1 Onion, 1/2 inch Ginger, 4-5 Garlic cloves, 2 Green Chillies together. 6) Salt to taste 7) 1/2 tsp Kashmiri Red Chilli Powder 8) 1/2 tsp Black Pepper 9) 1/4th tsp Turmeric Powder 10) 1/2 cup chopped Coriander Leaves. Make a BATTER with above ingredients. (No Water) B) HOW TO PREPARE EGG DHOKA : Take a metallic Pan/ Big Bowl (here taken one Cake Pan). Brush Refined Oil all over. Pour the Egg Batter. Cover it. Take a Big Hundi/Container. Boil water upto almost 1/3rd of the container. When the water comes to its boiling point, put a Bowl or a metallic stand into the water and over it, keep the pan with batter under cover. Wait for its well Baked. Set aside. Cool it. Take out the whole baked batter from the pan, (use a knife, if required). Cut the baked batter into diamond or square type pieces like Dhoka. (see the video for cutting). C) HOW TO PREPARE EGG PAKORA: Make a light Slurry with 2 tbsp Cornflour, 1 pinch Salt, 1/4th tsp Black Pepper, 4 tbsp water. Coat each Dhoka with slurry. (It helps Egg Dhoka remain in tact while frying and make dhokha Crispy.) Fry all coated Egg Dhoka in 1 cup heated refined Oil (in batches) in Medium flame till each dhokha turns to Golden /Brown colour. EGG PAKORA is ready. D) HOW TO PREPARE A SAUCE SLURRY: Ingredients: - 2 tbsp each Soya Sauce, Red Chilli Sauce, Tomato Ketch Up and 2 tsp Cornflour Preparation: - Make a Sauce Slurry with 1 cup Normal Water and above ingredients. (Cornflour thickens the gravy). Keep aside. E) HOW TO PREPARE GRAVY AND FINAL PREPARATION: (STEP BY STEP) Ingredients : 1) Onion (1 Medium): Cut to Medium type.(square/dice) 2) Green, Red & Yellow Bell Pepper (all 1/4th of one medium sized) : Cut to Medium Sized (square/dice type) 3) 4 Slitted Green Chillies. 4) 1 tbsp Chopped Garlic 5) 1 tbsp Chopped Ginger 6) Chopped 1 bunch of Spring Onion.(separate White & Green Portion) Preparation: 1) Heat 1 tbsp Refined Oil in a frying pan. 2) Add white part of Spring Onion. Add Chopped Garlic & Ginger. Sauté lightly. 3) Add chopped onion, chopped bell peppers and slitted Green Chillies. Sauté lightly. (don’t overcook) 4) Add Sauce Slurry, Salt to taste and 1 tsp Sugar 5) Wait till the gravy thickens. Add EGG PAKORAs. Saute a little . 6) Cooking is ready. F) SERVING : 1) Garnish with finely chopped Spring Onion. Shift to a serving Bowl. Spread some white sesame seeds on it. 2) It is a Side Dish & Indo-Chinese Cuisine : 3) Serve hot with Chinese Noodles/Chinese Fried Rice/Roti/Paratha. Music Links: • Spanish Rose
