Stuffed Palmyra Fruit Cake/Palm Cake/Taler Cake/Taler Pitha Recipe/Taler Idli/তালের পুর ভরা পিঠা MASTER CHEF: Smt Rubi Ghosh #stuffedpalmyrafruitcake #talerpitharecipe #talercake #palmcake USES of PALMYRA PALM TREE: The palmyra palm has long been one of the most important trees of India, where it has over 800 uses. The leaves are used for thatching, mats, baskets, fans, hats, and umbrellas, and as writing material. The black timber is hard, heavy, durable and highly valued for construction, esp. in structures exposed to water, e.g. fences, and boats. The tree yields many types of food. The young plants are cooked as a vegetable. The young fruits are jelly like seeds and are eaten raw. A sugary sap is fermented to make a beverage called arrack, or concentrated to produce a crude sugar called jaggery/palm sugar. In addition, the tree sap is taken as a laxative, and medicinal value has been ascribed to other parts of the plant. TOOLS & APPLIANCES (used here): A. Prestige Induction Cooker B. A Big Borosil Bowl C. YFL Home Ceramic 3 litre Black Serving Bowl D. Hawkins 4 litres Deep Kadhai E. All other kitchen tools as required (All above mostly from Amazon) INGREDIENTS & PREPARATION: TOTAL COOKING TIME: 2 hours approx. ( with 1 hour prep.time) A) HOW TO EXTRACT PULP FROM PALMYRA FRUIT: Taken 1 Medium sized Ripe Fruit (Preferably, Black Colour Fruit). Fridge for 2 to 3 hours. Remove the cap and the skin. Every Fruit has 3 pods. Separate them. At First, squeeze one pod by hand. Add little water and then again squeeze the pod by hand. This process softens the fibres. A little Pulp will come out while pressing. Keep it in a bowl. Now, rub the pod against a grater to extract the all remaining pulp as much as possible. Follow the process for each pod. Strain the pulp to remove the remaining fibres. B) HOW TO PREPARE BATTER : (with Ingredients & its quantity) Take 1 cup Semolina in a big bowl. Add Salt to taste, 1 cup Yogurt, 3 tbsp Rice Flour, 1tbsp Refined Oil. Mix well. Add 1 cup water in batches. Mix well. Add 3 tbsp Sugar, 1/4th tsp crushed Fennel seeds. Take 4 cardamom. Peel its skin. Crush cardamom with a small amount of sugar and add with the batter. Mix well. The batter is ready . Keep in rest for 20-30 minutes under cover. Thereafter : Again, stir the batter well to soften the batter. Add 1 cup raw palmyra pulp & 1/2 tsp Baking Soda and mix well. If required, add little water to keep the consistency fluffy. Fluffy batter is ready to cook. C) HOW TO PREAPRE PULP STUFFING: (with Ingredients & its quantity) Boil and condense 1/2 litre Full-Fat Milk. Keep aside. Boil the Palm Pulp in medium flame. Stir continuously. Add 1/2 cup Sugar and 1/2 cup freshly grated Coconut. Stir well. Mix Condensed Milk and 3 tbsp roasted mixed dry fruits. Cook till it reaches the desired consistency. Shift to a bowl. Cool it. D) STEAMING OF CAKE/IDLI : Take some small bowls (here, 5 bowls). Brush Ghee all inside the bowls. Pour 2 tbsp batter into each bowl. Keep 1 tbsp condensed Palm Pulp in the middle of the batter. Cover the pulp with another 1 tbsp batter. Tap a little. Boil 2-3 cups water in a deep kadhai. Keep a steel stand/pot in hot water. Put a flat steel plate over the stand. Put the stuffed bowls on the plate. Cover and heat for 5 mins in low to medium flame. Cool it. Stuffed Palm cake/idli is ready. Take out the cake from the bowl. Put it on a serving Plate. E) FINAL TOUCH : Garnish with some freshly grated Coconut and roasted dry fruits. It is ready to serve.
