Secret to making Jackfruit Mulka that is crisp on the outside and soft on the inside and tastes like yum. Mulka is a specialty of Mangalore/Udupi region. Narrated in Kannada with English subtitles. Jackfruit Mulka Ingredients: Sonamasoori Rice - 1 and 1/4 Cup Jackfruit or Halasina Hannu - 2 cups chopped. Grated or powdered Jaggery - 1 and 1/2 Cups to 2 Cups Salt - 1/4 tsp Grated Coconut - 1 Cup Method: 1. Soak 1 and 1/4 Cup of Sonamasoori Rice about 2 hours prior to preparing the batter. 2. Add only the soaked Rice to the mixer jar. Do not add the water used to soak the Rice. 3. Grind the Rice to a coarse texture. Transfer this to a bowl. 4. To this, add 2 Cups chopped Jackfruit or Halasina Hannu. 5. Add 2 Cups grated or powdered Jaggery. 6. If Jackfruit/Halasina Hannu is very sweet, then add a little less Jaggery. About 1 and 1/2 Cup of Jaggery is enough if Jackfruit/Halasina Hannu is sweet. 7. Add 1/4 tsp Salt and mix once. 8. Add 1 Cup grated Coconut and mix once. 9. Now transfer all of these ingredients to a mixer jar incrementally, in batches, and grind them. 10. Do not grind the Rice to a fine paste. Instead, allow the mixture to retain coarse texture. 11. Ensure that only Jackfruit and Jaggery are fully ground and turn into a paste. 12. I did grind everything 3 times and everything is now transferred to a bowl. 13. Now mix everything well with the help of a spoon. 14. If the batter is too runny, add 1/4 Cup of Rice Flour and mix to the dropping consistency. Now the batter is ready for frying Mulka/Fritters. 15. Directly drop the batter in the Oil as you see in the video. 16. Keep the flame low and drop 10-15 Mulka at once. 17. After frying one side, mix them with the help of a ladle. 18. Keep the stove on medium flame. 19. Once the Mulka/Fritters turn a little brownish in color, remove it from the Oil and transfer them to a colander-type strainer to remove excess oil. Now hot Jackfruit Mulka or Jackfruit Friiters or Halasina Hannu Mulka is ready to serve. Quality cooking wares that I love and recommend.
