今天这道菜我其实在2年前就分享过,不过现在我回看当时的视频,有些步骤不完美,所以我又拍摄了一个精进了的改良版。 🥣 Ingredients: 3 salted egg yolks, 150g shrimp, 2 pieces of soft tofu, a handful of baby peas. The marinade for the shrimp: 2 teaspoons of cornstarch, 1 teaspoon of cooking wine, 1/4 teaspoon of salt and white pepper powder. 1 bowl of hot water (about 250 ml), 3/4 teaspoon salt, 1 teaspoon sugar, 1/2 teaspoon cooking wine and white pepper. starch water (1 tablespoon cornstarch +2 tablespoons water). 🥣 材料: 咸蛋黄3个,150克虾仁,软豆腐2块,青豆1小把。 虾的腌料:2小勺玉米淀粉,1小勺料酒,1/4小勺盐和少许白胡椒粉。 开水1小碗(约250毫升),3/4小勺盐,1小勺糖,1/2小勺料酒和适量白胡椒粉。 淀粉水(1大勺玉米淀粉+2大勺清水)。 ‼️ 1 大勺 = 1 Tbsp = 15 ml,1小勺 = 1 tsp = 5 ml。 ‼️盐的分量根据咸蛋黄本身的咸度做调整。 📝做法 Methods: 1. 咸蛋黄放进煮滚水的蒸锅内,大火蒸15分钟至熟。蒸好的咸蛋黄先用刀把它们碾碎,然后才剁碎。 Steam salted egg yolks for 15 minutes over high heat until cooked.
