This dish 'pakora' originated in NorthWest of India. I took it an 'southernized' a bit. The difference in taste is more than I can describe. Try this recipe and see (actually taste) for yourself... and let me know thru comments. Ingredients: Pakora: 600 Gm - Fish Fillet 1 1/2 Tbsp - All Purpose Flour 2 Tbsp - Rice Flour 1 1/2 Tbsp - Corn Flour (starch) 1 1/2 Tsp - Chili Powder 2 Tsp - Ginger/Garlic Paste 1 Tsp - Pepper Powder 3/4 Tsp - Curry Leaves Coriander Leaves 1/2 Tsp Fennel Powder Pinch - Fenugreek Powder 1 - Egg Salt to taste (about 1 1/2 Tsp) Oil for frying Dipping Sauce: 5 Slices - Dill Pickle 2 Tbsp - Mayonnaise 1 1/2 Tsp - Lemon Juice 1 Tsp - Chili Powder 1 1/2 Tsp - Coriander Leaves Method: Dipping Sauce: Blend/grind dill pickle, coriander leaves and lemon juice. Should not be smooth - need 'finely chopped' feeling. Transfer to a bowl and mix with mayo and chili powder and whisk (don't blend). Cover and chill in refrigerator for at least one hour. Pakora: Clean, wash, pat dry and cut fish to desired size. Add ginger/garlic paste and egg and mix well. In a separate small bowl, add all dry ingredients, plus salt and mix. Add this to the fish and mix well. If the coating is a bit lumpy, sprinkle some water and mix till the coating is smooth cover on fish. Note: The coating should not run/drip. Heat enough oil in a wok or deep pan to medium high. Place fish one piece at a time, to oil/pan capacity. Fry for 4 to 5 minutes, turning frequently (till golden). Remember, fish does not take time to cook.. All we need is the coating to fry and become crispy. Remove to a paper towel lined plate and let any excess oil drain.
