This recipe is easy to follow and covers all of the steps necessary to knock the socks off your guests! Now remember this is a spatchcock turkey which is not always as pretty as that presentation quality Thanksgiving turkey. No worries though... we will be smoking one of those in a few weeks too! I used my turkey brine recipe for this one. It consists of: 1 gallon unsalted chicken broth 1/2 cup salt 1/2 cup light brown sugar 1 tsp garlic powder 1 tsp black pepper 1 tsp parsley 1 tsp thyme top off with water if necessary I placed the 14lb turkey into a 2.5gal zippered freezer bag along with the brine and placed it in the refrigerator for 14-16hrs. Removed from the brine and pat dried the turkey with paper towel. I then proceeded to spatchcock the turkey. See the video for details! I used avocado oil as a binder and used the Spiceology Turkey Rub ( https://bit.ly/3wZW85B ) on both sides of the bird. I made my own turkey injection and injected the breasts, thighs, and legs. At this temperature it will take between 12-15min per pound, but ALWAYS track your internal temperature. You want the turkey breast to reach 165F no less and not much higher either. My 14lb turkey took about 3 hours and 10 minutes. This will produce an EXTREMELY juicy turkey! I am being 100% honest when I say that this is the best smoked turkey that I have ever had!
